Florentine Simmered Rice

Ingredients

1 3/4 cups Chicken broth

1 tsp dried Italian seasoning

1 cup spinach chopped

3/4 cup long-grain white rice uncooked

1/2 cup Parmesan cheese grated


Directions

1. Heat broth and Italian seasoning in 2 qt saucepan over medium-high heat to a boil. 2. Stir in spinach and rice. Reduce heat to low. Cover and cook 20 min. or until rice is tender. Stir in cheese before serving.

This is my new favorite go-to recipe. You may even omit the cheese and/or add garlic (fresh, salt, or powder) if you like. It is sooooo easy and fast (from start to finish is NOT one hour, but half that time)! It is healthy and simple! You can make it when you're in a rush or when you feel like something fancy. It can be a side dish or the main course. You can make it when you're sick or feel like a million bucks. It really is SO versatile! I made it tonight when I felt like fast, simple, yet fancy. LOVE it! You will want this recipe handy! I almost have it memorized now and thought I should share. :) You're welcome! ;) P.S. I recommend measuring the spinach after you've chopped it up or you won't have enough. You can't even taste it, so the more the merrier if you want to be strong like Popeye! ;)
