1 cup cocoa powder - Dutch process preferred. Replace 1/4 cup Black Cocoa for 1/4 cup cocoa powder for darker, richer cookies.
3 lg egg whites
2 tsp gluten free vanilla extract

watergoddess22These are a lot like Payard's flour less chocolate cookies, but without the walnuts. Think of a cross between a brownie and a cookie. Very chocolatey.
eck7Very weird texture... They were extremely chewy on top... Like rubbery almost. And on the underside they were gummy... I did not enjoy these cookies at all... We threw them all away. Not a recipe I will be making again.
