French canadian Shepherd's pie

This is a french canadian traditionnal meal that could be considered as a version of the Shepherd's pie. It is named "Pâté chinois" in french, which could be translated by "Chinese pie" because it is said that in the early 18th century, there was a lot of chinese people coming to Canada to work on the train tracks and the food served on the building sites were mainly made with corn, beef and potatoes, the main ingredients of the "Pâté chinois".

Ingredients

500 g beef minced

5 potatoes peeled and cut in quarters

1 540-milliliter can cream style corn

2 medium onions chopped

250 ml milk

3 tbsp butter or margarine

1 tbsp extra-virgin olive oil

2 pinches parsley flakes

Salt pepper

Ketchup (optional)


Directions

Preheat the oven at 375 celsius degrees. Cook the potatoes in the boiling water until they are soft. While the potatoes are cooking, pour the oil in a pan and brown the onions. Add the beef mince, the salt and pepper. Don't over cook the mince. When the potatoes are cooked, drain them, add the butter, the milk, salt and pepper and mash them. Put the beef and onions in the bottom of a dish that you can put in the oven, top it wih the cream corn and then with the mashed potatoes. Sprinkle the parsley flakes on it and put it in the oven for 10 minutes. Broil it for another 5 minutes or until the mashed potatoes have a nice golden crust.

I am from Montreal and Pate Chinois is a staple in my home... But I have jazzed it up a notch. I put one can of cream corn and one can of regular corn (or frech if it is in season). I also put some mixed veg in to hike up the nutritional value. I mix sweet potatoes and regular potatoes for the mash. And finally, I REALLY flavour the meat, which is normally a mix of low-fat minced pork and beef, with any kind of condiments I have in the house... sometimes asian inspired and at other time more spicy mexican inspired... I also let the meat cook through once than add some wine and wait til the meat has absorbed it and then put my pie together. It is a recipe that can take some time to make but I usually get 8 portions out of my dish and it freezes welll for lunches or a later meal.

Heating ones oven to 375 degrees Celsius could get a bit risky. Furthermore I don't think that many ovens in the US can achieve 707 degrees Fahrenheit. I assume this is a typo and that you meant 375 degrees Fahrenheit.
