1 Red Fresno Pepper

1/2 lb Fairy Tale Eggplants

1 bunch Basil

2 Tbsps Mascarpone Cheese

2 Tbsps Grated Parmesan Cheese

1 1/2 Tbsps Dried Currants

2 oz Ricotta Salata Cheese

1 Tbsp Red Wine Vinegar

I used mezza rigatoni and substituted a jalapeño for the Fresno. I chopped eggplant into bite sized pieces before adding to currants. Then I put the eggplant in my he pasta with the mascarpone.
