4 large ears corn
sea or kosher salt and freshly ground black pepper
1/2 cup mayonnaise
1 1/2 cups Queso Fresco crumbled or Cotija or Parmesan cheese, grated
4 tablespoons fresh cilantro minced
4 teaspoons chile powder
1 lime cut into four wedges
Made as directed on the grill. Instead of using the cilantro as a garnish, I chopped it and put it in the mayo/ cheese mix, WOW!!! So delish!!
phillygirl221loved it! instead of baking in oven, I mixed all the ingredients and smothered it on to the corns, wrapped it with foil and grilled. I served it using more cheese, cilantro, and chili powder. was so delicious. Definitely will be our summer favs. Thank you for the recipe!
eunabelleThis was extremely good, just what I was looking to make, the corn on sticks they sell in Mexico. The Queso was not too hard to find, had the cilantro on hand, and fired up the grill instead of using the oven. We really enjoyed this a lot, this will be a repeater!
