Fresh Figs with Mascarpone, Honey and Pistachios

Ingredients

2 cups mascarpone (if you are not a fan of mascarpone or Greek yogurt or ricotta works just as well)

2 - 3 tablespoons honey plus more for serving

2 teaspoon fresh lemon juice

1/2 teaspoon grated lemon zest

3/4 teaspoon pure vanilla extract

1 pint of fresh and ripe figs (Any fig varietal will do but I most often use black mission fig because that seems most readily available)

1/4 cup pistachios toasted and lightly chopped
