For the burgers: chop tuna to texture of hamburger meat..in large bowl combine tuna with garlic,mustard,cayenne,salt and pepper. Mix well and divide into 4 patties.
Heat olive oil in large skillet..add burgers and sear until browned and med rare. About 4 minutes per side.
