Fried Shrimp with Pineapple

Ingredients

Oil for frying

1 ts Salt

1/4 c Vinegar

1 tb Cornstarch

1/2 c Beer

1 lb Shrimp, peeled and deveined

1 tb Sugar

1 c Pineapple chunks

1 ts Baking Powder

1 c Flour sifted

1 Egg beaten

1/2 c Pineapple juice


Directions

1) Sift flour, baking powder, and 1/2 ts salt together in a bowl. Beat in egg and beer. 2) Heat oil to 375 degrees in deep skillet or deep fryer. Dip shrimp in batter, coating well. Fry shrimp, a few at a time, until golden brown. Drain on paper towels and keep warm. 3)In saucepan, combine cornstarch, sugar, 1/2 ts salt, and vinegar. Add pineapple juice, cook over low heat, stirring constantly, until sauce thickens. 4) Arrange shrimp on serving platter. Place pineapple chunks around shrimp. Pour sauce on top; serve at once.
