Garlic Soba Noodles with Toasted Sesame Seeds

Soba noodles in a garlic/soy/sesame sauce with green onions and toasted sesame seeds. This recipe calls for the addition of broccoli but you can add any vegetables you want, or you can just leave out the broccoli! (This is a revised recipe a friend of mine wrote up, the original recipe is on Allrecipes.com)

Ingredients

1-2 tablespoons Toasted Sesame Seeds

8 ounces Soba Noodles

4 tablespoons Rice vinegar

2 tablespoons Brown sugar

5 tablespoons Soy sauce

2 cloves Garlic Minced

4 teaspoons Dark sesame oil

5 Green onions Chopped

3 Cups Broccoli Florets (Optional)

Directions

1. Bring a large pot of salted water to a boil. Add the noodles and cook them for 3 to 5 minutes, or until they are just tender. Drain them, rinse them well with cold water, and drain them again. 2. In a large mixing bowl, mix together the vinegar, sugar, soy sauce, garlic, sesame oil and green onions. Add the noodles, and the toasted sesame seeds. Toss well, then stir in the broccoli. Optional: Let the dish sit for a few minutes at room temperature so the flavors can mingle and blend before serving.
