Ingredients

3/4 cup Chicken broth reduced sodium

1 1/2 tablespoon Cornstarch

2 tablespoon Sugar

2 tablespoon Low-Sodium Soy Sauce

1 tablespoon White wine vinegar

1/2 teaspoon Ground ginger

2 teaspoon Peanut oil

2 medium Scallion chopped

2 medium cloves Garlic minced

1/2 teaspoon Red pepper flakes

1 pound Chicken breasts uncooked, cut into small pieces

2 cups White rice cooked, hot


Directions

1. In a medium bowl whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside. 2. Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes. 3. Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes. 4. Serve chicken and sauce over rice. Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.

We tried this but we used canola oil instead of peanut (son allergic) and found it to be really good. Not as good as our local place but good.

Awesome! Will do again. Used 1/2 tsp Cayenne Pepper instead of Red Pepper Flakes. Quite spices, recommend 1/8 for mor rounded effect!

I added honey in the final minute to sweeten the taste. My wife, who is the pickiest eater you will ever meet had seconds. Nice and quick recipe.
