Ginger Nectarine Salsa

Great with grilled chicken and a nice Cabernet Sauvignon BigOven Tip: Easily make this ahead of time! The salsa can be made up to 36 hours in advance. Marinade grilled chicken beforehand for a quick and complete meal.

Ingredients

2 2/3 cups Nectarines chopped

1/2 cup Green onion chopped

1/4 cup Golden raisins

1 tablespoon Cider vinegar

1 teaspoon Ginger peeled, minced

1/4 teaspoon Salt

1/4 teaspoon Garlic minced

1/4 teaspoon Black pepper


Directions

Combine ingredients, cover and chill for at least 1 hour. Serve on top of grilled chicken, pork or fish.

Made with apricots. I know this is not the same as nectarines, but it was fantastic. We used it as a topping for meat, and then I ate it like a salad the next day for lunch.
