Ingredients

4 large chicken legs bone in, (about 1kg total weight)

3 large leeks dark green tops cut off and reserved the rest sliced into 1cm rounds

1/4 teaspoon peppercorns

1 bay leaf

2 tablespoons olive oil

2 sprigs of thyme leaves picked

90 g cooked ham shredded

200 ml crème fraîche reserving 2 tbsp for the pastry

4 teaspoons gluten-free cornflour

400 g gluten-free plain flour plus extra for dusting

1 teaspoon gluten-free xanthan gum

1 teaspoon salt

50 g mature cheddar grated

200 g butter chilled and cut into cubes

1 large free range egg

2 tablespoons gluten-free wholegrain mustard

2 tablespoons crème fraîche

1 large free range egg yolk beaten with 1 tablespoon of water, to glaze
