Gluten-Free Quick Breads

Ingredients

2 2/3 c sugar

2/3 c Melted Butter

3 c Zucchini, bananas, OR 16oz pumpkin

2/3 c Water

3 1/3 c all purpose GF flour

2 t. xanthan gum optional

1 1/2 t. salt

1 t. cinnamon omit w/banana bread version

1 t. cloves omit w/banana bread version

2 t. vanilla omit w/pumpkin version

1/2 t. baking powder


Directions

Mix ingredients. Pour into 2 greased loaf pans. (Muffin pans also work). Bake at 350 degrees for 60-70 minutes. Cover with foil part way through cooking so that the top doesn't burn. Cool on wire rack for 5-10 minutes and then take out of pan to cool rest of way.
