Don't over cook potatoes

2 pounds red potatoes cut into small wedges
1/2 pound green beans picked
8 ounces red peppers small dice
1 can (12 oz) cannelli beans drained
1 cup Fresh Basil chopped
1 cup olive oil
1/4 cup Rice wine vinegar
1/2 teaspoon Salt
1/4 teaspoon Black pepper
I cut the olive oil back to 3/4 cup and added 1/8 teaspoon of onion powder. I also used fresh red pepper.
