- In medium size pot melt butter and saute onion and celery (about 3 minutes)
- Add potatoes and cumin, mix well, then add broth and bring to boil over medium high heat
- Reduce heat and simmer for 10 to 12 minutes until potatoes are soft
- Using a hand blender (or counter top) blend in batches until smooth
- Add lentils and 3/4 of the gouda cheese
- Simmer another 5 minutes until gouda is melted
- Season with salt and pepper to taste
- Sprinkle remaining gouda on top just before serving
