4 Plum tomatoes halved, seeded, in 1/2" slices
2 tb Fresh basil chopped
2 tb Flat leaf parsley chopped
1 clove Garlic sliced
1/4 c White wine
1/2 lb Spinach spaghetti
salt and pepper to taste
1/4 c olive oil
1/2 lb Flounder fillets cut in 1/2" strips
I lightened this recipe by reducing the amount of olive oil and substituting chicken broth. That said, I found this recipe to have very little flavor. I found myself wanting more fish and more substance, maybe some sliced mushrooms would add to this without overpowering the fish.
