Greek Salad (choriatiki) - A journey to the islands

I will try to give you the basic recipe and some variations that you can try Greek traditional salad has the following basic ingredients: Fresh summer tomatos, Onion, cucumber, Feta cheese, olives, Fresh Green bell Peper, Extra virgin olive oil, origano or thym or Wild Greek "Throumbi", and vinegar. Other ingredients that can be used are : pickled capare seeds and leaves (very famous on the Cyclades complex islands), Marinated Gavros (anchovies), Glistrida Plant (purslane), Cretan rusks. Below you will find the Traditional Island Recipe & some comments about the variations

Ingredients

3 large tomatos Standard variety or Pomodoro

1 medium White or Red Onion Chopped in thin rings

1/2 medium Green bel Pepper Chopped thin 2-3cm legnth

150 grams feta cheese 2 large pieces 10x5x1cm

1 small cucumber or 1/3 of a standard one

1 spoon capare seeds (pickled)

8 medium/large Olives try Calamata olives or round big ones

1/3 cup Extra virgin Olive Oil or less

1/2 tea spoon for each salt / pepper / thyme or origano or "throumbi"

6 pieces (optional)


Directions

Wash well the vegetables Cut the tomatos in 4 and each piece in 2 in 3 (depends on the tomato) dont cut them vertically like cubes - cut them in order to look like orange natural pieces Cut the cucumber in round disks without peeling the outer shell Cut the onion in rings as mentioned before Cut the Green bell Pepper like mentioned in the list above Take a large Salad Bowle Place the tomato (with little salt) on bottom and the peppers above, then the cucumber (salt a little and put the vinegar ) and the onion rings, put half of the oilive oil. Then on top put the pickled capare seeds and the leaves(optional), the olives and the cheese. black pepper and thyme or origano or throumbi on the top of the salad and specially on the top of the cheese. Put the remaining oil on top of the cheese. Variations: 1. if you plan to use Cretan rusk you have to put them in the water for a second. If you use the big ones crashed them a little(2-3 pieces) and put them on the bottom together with the toamatos. if you use the small ones put them on the middle. 2. If you choose marinated fish make a star on the top 3. Gristrida Plant(purslane) can be cut in small pieces with your hand and put in the middle and the top TIPS Use real tomatos!!! tomatos grow on Summer generally (in my country from late April to Octomber) , there is no use to eat tomatos that taste like paper if you use pomodorro variaty, that are smaller just use more tomatos If you are in Greece try using tomatos from Santorini island (they grow with very little water) they are smaller so you will need more of them but they are very sweet and taste like real tomato Remark : Greek "choriatiki" salad has no lettuce, iceberg or similar stuff , no speacial dressings,
