Heat grill or pan on medium high. Pound chicken breasts to an even thickness. Spray or lightly brush chicken breasts with olive oil and sprinkle salt and pepper. Cook until done.
For salsa
Heat olive oil on medium high. Add pineapple and red onion. Cook for 2 minutes until the vegetables have softened. Turn off heat, stir in soy sauce.
Serve chicken topped with salsa.
