Grilled Turkey Tenderloin

Ingredients

1/4 cup soy sauce

1/4 cup vegetable oil

1/4 cup apple juice

2 Tablespoons lemon juice

2 Tablespoons dried minced onion

1 teaspoon vanilla extract

1/4 teaspoon ground ginger

1 dash garlic powder

1 dash pepper

2 turkey breast tenderloins (1/2 pound each)


Directions

1. In a large resealable plastic bag or shallow glass dish, combine the first 9 ingredients. 2. Add turkey, seal or cover and refrigerate for at least 2 hours. 3. Discard marinade. Grill turkey, covered, over medium heat for 8-10 minutes on each side or until juices run clear. Serve with potato pockets. Diabetic exchanges: One serving (prepared with light soy sauce) equals 4 lean meat, 1 vegetable, 1/2 fat; also, 284 calories, 558 mg sodium, 82 mg cholesterol, 6 gm carbohydrate, 31 gm protein, 14 gm fat.
