Ingredients

50 each White Corn Tortillas

50 each Eggs

100 tablespoon Refried Beans See seperate recipe

100 slices Turkey Bacon

50 tablespoons Queso Fresco

50 tablespoons Salsa Optional

Oil vegetable oil


Directions

TORTILLAS 1. Slightly fry the tortillas 2. Place over paper towels to drain excess oil EGGS 1.Pre-heat oven to 350 degrees 2. Spray tins with Pam Cooking Spray 3.Using the baking tins, crack one egg into each of the 6 muffin cups. 4. Lightly season with salt and pepper 5. Place in the oven until eggs are cooked about 15 minutes. TURKEY BACON 1. Cook the bacon on the flat top until crisp REFRIED BEANS 1. See separate recipe PLATING INSTRUCTIONS 1. Place two tortillas on a plate 2.Place about 2 tablespoon of beans on each tortilla and spread out 3. Add two slices of Turkey Bacon on each tortilla, crossed 4. Place one egg on each tortilla 5. Garnish with Queso Fresco, about 1 tablespoon each tortilla
