GT Express Spinach Stuffed Lemon Herb Chicken

Ingredients

2 4-5oz. boneless skinless chicken breasts

1/4 cup Lemon juice

1 tbsp Olive oil

1 tsp Dried parsley flakes

packet of splenda or stevia

fresh spinach leaves

4 tbsp of Parmasean Cheese

1/4 cup dijonaise Mustard

salt and pepper to taste


Directions

Place all ingredients except cheese and spinach in a plastic bag. Cut a pocket in the thick side of the chicken, place in bag with the marinade. Seal bag and squeeze to coat chicken. Marinate for 30 minutes. Preheat GT Xpress and spray with no-stick cooking spray. Remove chicken from marinade, stuff pocket with spinach leaves and most of the parm cheese, save some to sprinkle on the chicken just before its done, and place in wells. Close cover and bake 15 minutes or until chicken is done. about a minute before its done, add some parm cheese to the top for a lil crunch. salt and pepper Heat up the dijonaise mustard with a lil white wine, and drizzle over the chicken.
