Hail to the Kale Salad

A kale based salad with a nut based soy sauce dressing. Perfect for lunch time at the office

Ingredients

2 heads Kale

2 Green onions chopped

1-2 Carrot grated

1/4 cup Dried Cranberries

1 Apple chopped

Sunflower seeds

1 cup Raw Peanut or Almond Butter

1 cup Water

4 Pitted Dates soaked in water (if not soft already)

1/4 cup Lime Juice and Lime Zest 2 limes needed

2 cloves Garlic peeled and chopped

1 ounce Fresh ginger

2 tablespoons Low sodium soy sauce


Directions

Strip thick, large stems from kale. Rinse and chop the kale, then place in large bowl. Place all the dressing ingredients in a high power blender and blend until smooth and creamy. Pour 1 ½ to 2 cups of dressing over salad and toss or massage with clean hands to coat all kale leaves. If you have reserve dressing, save in fridge and use within one week. Dressing can also be used for veggie dip, too. Top dressed kale with salad toppings of your choice (toasted slivered almonds, sunflower seeds, grated carrot, grated fresh beets, green onions, fruit)
