Hearty vegetable soup

Ingredients

1 T Veg oil

3 Large carrots Peeled and cut into 3/4" piece

2 Large parsnips Peeled and cut into 3/4" pieces

2 Small onion Cut into 1/2" pieces

6 Large garlic cloves Minced

8 C Chicken broth

2 Med potatoes Peeled and cut into 1" pieces

2 t Minced fresh thyme

2 Slices Hearty white Lightly toasted

2 C Chard Stemmed and chopped

1 Sprig Rosemary

1 Bay leaf

1 10oz package frozen baby lima beans


Directions

Heat oil in lrge heavy pot over med-hi heat until shimmering. Add carrots, parsnips & onions; cook until lightly browned, about 5-7 minutes. Add garlic, cook about 30 seconds. Add broth, potatoes, all herbs & bring to boil. Reduce heat to low, cover, simmer about 15 minutes. Remove and discard rosemary & bay leaf. Transfer 3 C solids, 1 C broth and bread to blender, puree until smooth. Stir puree back into pot. Add spinach, cannellini beans & lima beans & cook over med heat about 8 minutes. Stir in 1 T vinegar and season w/ salt & pepper. Serve passing extra vinegar to taste.
