Herb Crusted Perch (ww 4.3 Pts)

Ingredients

1 tablespoon Bread crumbs

1 teaspoon Basil dried

1 teaspoon Paprika

1/2 teaspoon Salt

1/2 teaspoon Fennel seeds

1/2 teaspoon Thyme dried

1/2 teaspoon Oregano dried

1/4 teaspoon Pepper

1/4 teaspoon Red pepper flakes

2 fillets Perch (5 oz each)

2 teaspoons olive oil


Directions

In a food processor (a coffee grinder will work well) combine the first nine ingredients; process until fennel seed is finely ground. Transfer to a shallow bowl. Dip fillets in herb mixture coating both sides. In a heavy skillet over medium-high heat cook fillets in oil for 3-4 minutes on each side or until fish flakes easily with a fork.

The fish curled up while cooking but it was good.

This recipe was delicious. When the perch were frying, the fragrance of the spices cooking reminded me of blackening seasoning my husband and I have used in the past for blackening salmon. It was quick and easy and we will definitely make it again. Thank you so much for the recipe.
