Himalayan Red Rice Primavera

Ingredients

2 tbsp fresh parsley 2 tbsp fresh pepper Salt

1 1 cup himalayan red rice

1 corn on the cob


Directions

Boil 1.5 cups of rice for 30 minutes. Meanwhile slowly sautee bell pepper, corn from the cob, and onion in olive oil for 20 minutes on medium low. Then add mushrooms, tomato, tarragon, parsley, and basil. Strain rice and add to vegetables. Mix and cook for 10 minutes. Salt and pepper to taste.
