Honey Citrus Vinaigrette for Snow Peas And Pea Tendril Salad

Ingredients

3 tb Ginger peeled & grated

2 tb Honey

salt and pepper to taste

1 bn Chives cut finely

Juice of 2 lemons

2 c Canola oil

Juice of 2 limes

Juice of 4 oranges

1/3 c Sesame oil


Directions

Place citrus juice in a stainless steel bowl. Add ginger, honey, salt and pepper. Slowly whisk in the oils until emulsified. Add chives and adjust seasoning. Steam snow peas until tender, shock in cold water, drain. Toss with pea tendrils and vinaigrette. Recipe by: Cooks Garden Catalog, Spring/Summer 99
