Horseradish-Crusted Flank Steak

Ingredients

enough to cover stea Red roasted peppers

3 tbsp. olive oil

3 leeks white and green only

3/4 cloves garlic chopped

1 cup parsley

Salt and pepper

2 1/2lb flank steak

1/2 lb Provolone

3/4 cup Bread crumbs

3/4 tbsp Horseradish


Directions

Preheat oven to 425.Heat the oil in large skillet over med. heat. Add the leeks and garlic and cook until soft.Remove from heat,add the parsley and season with salt and pepper. Let cool. pound meat with mallet until 1/4 inch thick.Lay out on cutting board season with salt and pepper.Place the roasted red peppers evenly over meat,leaving a 1 inch border all around.Top with cheese slices,then leek mixture. Roll ionto cylinder tuck in filling . mMake the crust: Mix breadcrumbs,parsley,horseradish,olive oil,salt and pepper to taste in a bowl until moistened.Brush steak olive oil and press the breadcrumbs over top and sides of meat.Tie with twine in 3 spots.Place steak in oven till thermometer reads 130 about 45 min.let sit fir 10 min. /15 min. before you cut meat!!
