Indian Lentil Soup

Ingredients

2 cups lentils

8 cups stock

1 onion chopped

1 carrot shredded

1 stalk celery (opt)

1 teaspoon salt

1/4 teaspoon pepper

1 teaspoon curry

1/2 teaspoon cumin and coriander

1/4 teaspoon turmeric

1 clove garlic peeled and chopped


Directions

Cover lentil with stock and bring to a boil. Add veg. Lower heat to simmer and add all spices, onion and garlic. Simmer until lentils are soft and soup is thickened with dissolved lentils - about 1 hour. Serve topped with a spoonful of yougurt and bread.
