Italian Sausage Soup

Ingredients

1 1/2 pound Mild Italian Sausage Links

4 can (14 1/2 oz) Beef broth

3 can (14 1/2 oz) Water

1 1/4 cups Red/burgundy wine

2 large Onions chopped

2 cloves Garlic pressed

1 can (29 oz) San Marzano Tomatoes

1/2 teaspoon Dried basil

3 tablespoon Parsley

2 Zucchini sliced thick, not peeled

3 cups Bow tie pasta (farfalle)

Parmesan grated


Directions

Cook and drain sausage and then slice it. Saute onion and garlic in reserved fat from sausage - add olive oil, if needed. Simmer everything except zucchini and parmesan in stock pot for at least 30 minutes. Add zucchini and pasta 20 minutes before serving. Garnish with parmesan.
