Jen's Ham & Beans (Dec. 30, 2010)

Ingredients

Leftover Christmas Ham chopped

2 celery stalks ends cut off

1 cup chicken broth

2 pounds Northern Beans cleaned & bad beans removed)

1 to 2 tablespoons minced onion dry

1 teaspoon garlic powder

dash cayenne

1 teaspoon parsley dry

1/4 teaspoon red pepper flakes

to taste salt & pepper


Directions

Prepare beans as described on package (soak). When beans are ready, combine all ingredients. If you still have the ham bone, throw it in the pot. Add water to the pot just over the ingredients. Be careful with the salt, the ham will add sodium. Bring to boil for 20 minutes. Simmer for 2 hours. Enjoy! :) Tip: I cleaned my beans, put in a pot of hot boiling water for 2 minutes and simmered with heat off, covered, in pot for 1 to 2 hours. Beans are fine this way.
