Jodie's Cheesy Chicken Empanadas

Ingredients

2 cups Chicken breasts boneless and skinless

1 cups mexican cheese

1/3 cups chipotle flavored mayo

2 tablespoons cilantro chopped

1 egg

1 tablespoon water

14 oz pie crust refrigerated

1 teaspoon chili powder


Directions

Heat oven to 375(F). Combine first 4 ingredients. whisk egg and water until blended. Unroll pie crusts. Roll each into 12in. circle. Cut each crust into 8 (4in.) circles with biscuit cutter or around a glass. Place on parchment covered baking sheet. Spoon 2 tbls mixture onto center of circle; brush edge with egg. Fold dough circles in half. Press tops lightly to remove air. Press edges with fork. Brush tops with remaining egg. Sprinkle with chili powder. Bake 15 minutes.

Really good. I added sauteed red pepper and a tomato. Great way to use leftover chicken.
