John’s Sloppy Joes

Ingredients

1 pound Onions Fresh

8 ounces Bell pepper Fresh Green

1 ounce Garlic Fresh

4 ounces Canola Oil Vegetable Canola

10 pounds Ground beef Raw

1 pint Ketchup

1.25 pints Tomato puree Canned

1 quart Water

0.25 cups Cider Vinegar

2 ounces Brown sugar

2 ounces Beef Base

2 teaspoons Dry mustard

50 whole Wheat hamburger buns


Directions

1. Chop onions and peppers find. Mince garlic. Heat oil in large pot over medium-high heat. Add vegetables and sauté 5 minutes. 2. Add ground beef to pot and cook, breaking meat into smaller pieces as it cooks, until beef is browned and vegetables are softened. CCP — Heat until product reaches 165 degrees F. or more for at least 15 seconds. 3. Add ketchup, tomato puree, water, vinegar sugar and base. Heat to a high simmer, stirring often, then reduce heat to low simmer. 4. Add dry mustard to mixture. Simmer for 45 minutes. If mixture becomes dry, add more water. Heat until product reaches 170 degrees F. or more for at least 15 seconds. 5. Portion with a #8 scoop onto one hamburger bun.
