These are really lovely and light fritters perfect for lunch or starter. Most importantly you need to find yourself some fresh cooked sandcrabs to pick yourself or pre picked flesh from a fish monger. Make sure that the crab isn't over worked and shredded. Big flakes of sweet juicy crab really make these fritters fabulous.

3.0 Eggs
236.6 ml Self Rising Flour
59.0 ml Thai Fish Sauce
59.1 ml Palm Sugar grated
500.0 grams fresh sandcrab
good handful fresh coriander leaves
sprigs onions thinly sliced
6.0 leaves Kafir Lime sliced
2.0 Red Chillies sliced thinly
1.0 handful Green Beans thinly sliced
When you are ready to cook add the batter to the crab mix, you may not need all of it. You want it only as a binder so the crab mix will just hold together to cook, crab is more delicious than batter!!. Heat the flat grill on your barbie, if its not pristine clean use a silicon bbq sheet. (Crab has such a delicate flavour you don't want to ruin it with sausage grease). Place nice fritter size portions on the grill, not too thick, cook til lovely & golden on both sides...have the heat pretty high, a bit of sizzle is good....otherwise these work great in a non stick pan. Serve hot with fresh limes and a dollop of chilli jam. These fritters are great with an asian style cucumber salad with mint, basil & fried onions. [I posted this recipe.]
