Kefir Sour Cream

From Dom's Kefir Cheese Making website: http://users.sa.chariot.net.au/~dna/kefir_cheese.html#kefir-mascapone "Kefir-SourCream is quite simple and easy to prepare. It can be prepared similar in flavour and texture to traditional Italian Mascarpone, sour cream, or the Russian variant Smetana, with full body, rich creamy flavour, with a subtle bite and smooth texture. Depending on how rich you prefer Kefir-SourCream, you may use more or less cream in the recipe. Or strain for a lesser or longer time. This recipe prepares about 400gm [about 1lb] of Kefir-SourCream. It should keep good for at least one month refrigerated in a sealed container."
