Kenyan Beef Curry

Ingredients

4 cups of water

2 pounds of sliced sirloin steak tips.

4 minced cloves of garlic.

2 teaspoons of ground ginger.

2 tablespoons of cooking oil/ vegetable oil.

2 sliced red onions.

4 medium and diced tomatoes.

2 tablespoons of paprika.

1/2 teaspoon of pepper to taste.

2 teaspoons of curry powder.

4 tablespoons of tomato paste.

Salt to taste.

1 sliced jalapeño.

Fresh cilantro leaves for garnish


Directions

Place a cooking pot or a Dutch oven over medium heat, add in the water and bring to boil. Once the water boils, add in the steak, garlic, and ginger, stir properly to combine then bring to a gentle simmer for about twenty minutes. Make sure the pot is covered and endeavor to stir occasionally. Once cooked, drain the liquid out of the pot (reserve) then set the steak aside. Place the pot back over medium heat, add in the oil then let it simmer for a few seconds. Add in the sliced onion and cook for about five to seven minutes until it becomes soft (stir occasionally). Next, add in the tomatoes and cook for about three to five minutes. Add in the steak, stir to combine then cook for about five minutes. Add in other ingredients like the paprika, pepper, curry powder, tomato paste, and salt to taste alongside the reserved steak liquid. Add more water to cover the steak then bring to boil. Decrease the heat to simmer and cook for an additional one hour while stirring occasionally until the steak becomes tender and the sauce thickens. Add more seasonings to the curry if desired then serve with the jalapeño and cilantro as garnish, enjoy.
