Ingredients

4 lbs Russet potatoes peeled

Vegetable oil

Salt to taste

Pepper to taste


Directions

cut potatoes into 1/4 wide strips, wash the un-cooked potatoes in several batches of cold water, until water is clear. for crispier freedom fries, double fry them at different temperatures, in the same oil. Pour oil to a depth of 4 inches in a dutch oven,and heat to 325,fry potato in batches until lightly golden ( not browned) 4 / 5 min per batch. drain potateos on paper towels. Heat oil to 375, fry potatoes in small batches until golden brown and crisp 1 to 2 minutes per batch drain on clean paper towels, sprinkle with salt and pepper and serve immediately.

I made these this past Saturday. They were a huge hit. I made a whole bag's worth and while it seemed like a lot of fries they didn't last long. Will make again soon.
