Ingredients

3 cups diced chicken

2 tablespoons grill oil

1 cup bell pepper chopped

1 cup onion chopped

2 cans rotel tomatoes

1 cream of mushroom soup

1 cream of chicken soup

1/2 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon oregano

1 teaspoon chili powder

1/8 teaspoon red pepper

12 corn tortillas

3 cups cheddar cheese


Directions

1. Cook onion and bell pepper in oil until tender. 2. Mix onion mixture with soups, chicken, rotel tomatoes, and spices in a bowl. 3. Tear 3 tortillas in the bottom of greased round pans. 4. Top with 1 1/2 cups sauce. 5. Top with 3/4 cup cheddar cheese. 6. Repeat layers. Label lid: King Ranch Chicken Bake thawed 325 for 30-35 minutes or until hot.
