2 lbs ground pork

1 1/2 cups panko bread crumbs

1 large onion - finely diced

8 cloves garlic - crushed

2 tbsp gochujang

5 green onions - minced

2 tsp kosher salt

2 large eggs - lightly beaten to combine

2 tsp vegetable oil

sesame seeds to garnish if desired

3 tbsp apricot jam

2 tbsp gochujang

1 tbsp rice wine vinegar

1 tbsp honey

2 tsp soy sauce

1 tsp sesame oil

1/2 tsp granulated garlic powder or 2 cloves garlic minced

1 large white onion - thinly sliced. About 3 cups worth.

1/2 cup white sugar

1/2 cup rice wine vinegar

1/4 cup dry English mustard - Keens or Colemans
