Kristie's Stuffed Squash

Several variations for stuffed butternut or acorn squash. I've tried to the apple stuffing and its great!

Ingredients

3 large Squash butternut or acorn


Directions

Cut in half and remove seeds and strings. {lace cut side down on greased baking sheet. Bake 350 until soft but not mushy, 40-50 min. Remove and fill with one of the following: Sausage stuffing: 1 lb bulk sausage 4 celery stalks finely diced 1 med onion finely diced 2 carrots shredded 1/4 c water 2 c bread crumbs Saute sausage until cooked through. Add celery, onion carrots and water. Cover and simmer 15 min. Mix in bread crumbs. Stuff into squash. Bak 375 for 10 min. Apple-Sausage stuffing: 1 lb sausage 1 onion diced 1 apple diced 2 c toasted bread crumbs 3/4 v nuts chopped 3/4 c golden raisins 1 T sour cream or yogurt 1/4 t each thyme, basil, oregano Brown sausage in skillet. Add onion and apple and saute until just tender. Remove from heat. Add remaining ingredients and stuff into squash. Cover and bake 375 for 20 min. Apple stuffing: 2-3 tart apples diced 1/4 c maple syrup 1/4 c butter melted Combine and stuff into cooked squash. Cover and bake 375 30 min. Mushroom stuffing: 1 onion chopped 1/2 c mushrooms chopped 2 cloves garlic minced 2 c bread crumbs 1/2 t sage and salt dash of pepper Saute onion, mushroom, and garlic until soft. Add remaining ingredients and stuff into cooked squash. Baked 375 for 20 min. Fruit and nut stuffing: 1 1/2 c onion chopped 1 stalk celery diced 2 cloves garlic minced 2 tart apples chopped 1 1/2 c bread crumbs or cooked brown rice 1/2 c sunflower seeds 6-8 dried apricots chopped 1/4 c nuts chopped 1/4 c raisins, dried cranberries or currants 1/2 t salt 1/4 t each dried thyme, sage, oregano dash pepper Saute onion, celery and garlic in 1 T oil until onion is translucent. Add remaining ingredients and mix well. Stuff into cooked squash, cover and bake 375 for 20-30 min.

My husband and I enjoyed this very much. I made the same amount of filling even though my kids don't eat squash & used the leftovers to make stuffed mushrooms the next day.
