Lemon Cookies

These make a very sticky dough and very hard to mix, but once baked, they are well worth it. Delicious.

Ingredients

2 boxes Lemon cake mix

2 whole Eggs

1 8-oz container Cool Whip

milk A little if needed

Powdered sugar


Directions

Roll into balls; teaspoon into powdered sugar. Bake at 350F for 7 minutes.

For the time it took: I included thawing the cool whip on the countertop, as I was using it for cooking, there was no concern about separation. Truly a timeless "keeper" everything on hand. I did not check to see if this could be substituted with other instant cake mixes.

The simpleness of this recipe, means my children often take this one to school with them.

The dough is very sticky until you roll it in the powdered sugar, then it is managable. Wasn't sure what size to roll them so we did walnut sized ball and got about 6 dozen. We actually rolled larger balls of dough then broke them into walnut size once they were coated with powdered sugar and more managable. Cooked them 4 minutes longer because we used air bake pans. I will use cooking spray next time. They taste light and airy with a mild lemon taste.
