Lemon Energy Balls

Ingredients

2 cups raw cashews

2 organic lemons juiced and zested

1 1/2 cups unsweetened shredded coconut

1/2 cup dates pitted


Directions

Set aside a couple tablespoons of coconut. Add all remaining ingredients to a high speed blender & blend until smooth. Use a cookie dough scoop to make balls & roll them into the reserved coconut. Refrigerate and enjoy!
