Lentil Bolognese

Ingredients

2 tablespoons Olive oil

1 large Brown Onion finely chopped

2 stalks Celery finely chopped

1 large Carrot peeled and grated

2 cloves Garlic finely chopped

700 gram Tomato Passata

2 tomatoes seeded and diced

400 gram lentils drained and rinsed

2 teaspoons Dried thyme

1 cup Parmesan grated

pasta cooked

1/2 cup water


Directions

1 Heat Oil in large frying pan over medium heat, add Onion, celery, carrot and garlic, cook 5 minutes or until softened 2 Stir in passata sauce, tomato and 1/2 cup water, bring to boil 3 Add lentils and thyme and season to taste, cook 15 minutes or until slightly thickened 4 Serve with pasta and top with Parmesan.
