3 lbs red potatoes cut into uniform bite-sized pieces

1 lb fresh green beans trimmed and cut in half

1 entire head of garlic

2 slices of turkey bacon

1/4 cup extra virgin olive oil + 3 tbsp for roasting

2 tbsp Dijon mustard

1 tbsp honey

3 tbsp fresh lemon juice (~1/2 of a juicy lemon)

1/3 uploosely packed fresh parsley chopped

2-3 tbsp chives finely chopped

Sea salt and fresh ground pepper to taste
