Ingredients

2 tbsp + 1 tbsp olive oil

half a block of extra firm tofu drained (press between paper towels) and sliced into cubes

2 garlic cloves minced

1 inch piece ginger crushed

15-18 long beans cut lengthwise into about 3 inches

1/2 delicata squash deseeded and sliced into half rings

1/2 red onion sliced

1 tbsp soy sauce

crushed black pepper to taste

extra salt if needed

2 tbsp water to sprinkle over

1 tbsp sesame seeds
