Made a Japanese variation of the recipe in Every Grain of Rice:
-Used 1/4 cup raw hijiki reconstitued in cold water for 10-15 minutes
-Used double the amount (and doubled everything else) of frozen lotus root (no blanching needed)
-Added soy sauce , Sancho and wasabi paste to taste
- skipped the mushrooms and shrimp just for this time as it was going to be too much
-Chiffonaded 5-6 shiso leaves
- Let it sit for at least 15 minutes
