Ingredients

1 1/4 cups Almond flour

1 cup Splenda

1 Egg beaten

1/2 teaspoon Almond extract

1/4 cup Butter softened


Directions

Mix all together well and form into 24 small balls. Press flat on a ungreased cookie sheet. Decorate with an almond slice (optional) Bake for 8 minutes at 350 degrees F.

These have a good flavor, but the recipe calls for too much splenda, so it's like the sweet drowned out the flavor I was trying to taste. I would try using half cup instead of 1 cup. Also, I had to cook these for 12 minutes at 350, still got the nice chewy texture I was looking for, and it held together.

These little cookies rock. Here's the recipe that I've been using. They are very close. But, this cookie is the best and if you're a diabetic you'll really appreciate these little gems. Almond Cookies 2 Cups almond flour 1/2 Cup artificial sweetener–I use granulated Splenda 1 stick butter — (1/2 Cup) softened 1/2 teaspoon salt — (if using salted butter, omit salt here) 1 teaspoon vanilla extract 1 teaspoon almond extract How To Prepare: Preheat oven to 300F. Combine all ingredients. Form dough in to walnut sized balls and place onto greased cookie sheet. I just roll the dough in my hands. Bake for 5 minutes. Press down lightly with fork, then continue to bake for another 15 minutes. Let cool.
