Low-Carb Breaded Fish

Oven fried for crisp w/ extra fiber in the breading which keeps the net carbs low. Cajun spice accents the flavor.

Ingredients

7 grain cereal

2 Tablespoons Flaxseed Meal

1/4 cup Corn meal

1/2 teaspoon Kosher salt

Cajun Spice mix

1/8 cup Buttermilk

1/8 cup Egg Substitute

10 ounces Whitefish - 2 fillets


Directions

Mix dry (first five) ingredients in a zip-lock bag. Blend buttermilk and egg together in a bowl. Cut up fish into fingers or bite-sized pieces. Preheat oven to 425 Dip fish pieces in bowl then drop them in the bag. Shake the bag to evenly coat the fish. Place breaded fish on a sprayed cookie sheet then lightly spray tops with oil. Bake about 15 mins until lightly browned and crispy. 7-grain cereal is a blend of helthy grains. I find it in the bulk section at Whole Foods. It's great for adding to bread, pancakes, or any number of other recipes. I have recently seen 15-grain cereal as well, but any coarsely ground grain blend will work fine for this recipe.

What is 7 grain cereal?? Is that a brand name of cereal or do you just blend up some healthy grains in blender?
