Mah's Cheesecake

Ingredients

3 packages Cream cheese softened

3 large eggs room tempture

3/4 cup sugar

1 1/2 teaspoons Vanilla extract

1/8 teaspoons Salt

2 cups Sour cream room tempture

1 3/4 cups graham crackers crushed

1/4 cups Sugar

1/2 teaspoon Cinnamon

1/2 cups Butter melted


Directions

Begin by preparing the crust. Crush the graham crackers, add the sugar, cinnamon and melted butter. Spray a spring form pan with non stick spray. Spread cracker mixture evenly on the bottom of the pan and press firmly. Set aside Beat cream cheese and sugar. Add one egg at a time. Add vanilla and salt. Do not over mix. The batter should have small lumps. Fold in the sour cream. Place a glass casserole dish under the cheese cake and pour about 3 to 4 inches of boiling hot water into the glass dish. Place cheesecake directly over the glass dish. Bake @ 300 degrees for 50 minutes to 1 hour or till the center is firm. DO NOT OPEN THE OVEN. After it cooked and center is set, shut off the oven and leave the cheesecake inside for 3 more hours. Then remove and let completely cool and place in the refrigerator and chill for at least 4 to 5 hours.
