Mary's Beef and Bean Burritos

Ingredients

6 Pounds Ground Beef

1 Cup Taco Seasoning

40 Flour Tortillas, 10 inch

8 Cans Refried Beans

2 Large Blocks Colby Jack Cheese Grated

8 Freezer Bags, One Gallon


Directions

1. Brown beef in a large pot over medium heat until no longer pink. Drain and discard fat (never down your drain!!!) Add taco or burrito seasoning. Stir in water and simmer until the liquid is almost entirely evaporated. Cool. 2. Spread 1 or 2 large spoonfuls of refried beans and 1/4 cup ground beef on each tortilla. Spread several tablespoons cheese over beef. Wrap burrito style and then wrap each individually in foil. Divide evenly among freezer bags. 3. Seal and freeze. To cook: Thaw the burritos in the fridge or you can reheat them straight from freezer. If microwaving, remove foil, defrost and reheat. If baking in oven (the preferred method), bake in foil at 375 degrees for 30 minutes if frozen and 300 degrees for 30 minutes if thawed. Serving: I like to serve them Cafe Rio style with guacamole, sour cream, lettuce and tomatoes on top. You will have many left over for lunches, and future dinners when in a crunch you will just want to make sure you have the desired condiments when planning on using the frozen burritos for dinner.
