Pre-heat oven to 350 degrees. In a small sauce pot, melt butter. Combine with graham cracker crumbs until crumbs hold shape in hand.
Evenly press crumbs in bottom of spring form pan and bake approximately 30 minutes.
In mixer with paddle, combine cream cheese and mascarpone. Mix until soft and thoroughly combined, scraping bowl frequently.
Add sugar to the cream cheese mixture and thoroughly combine; scrape down bowl.
Add eggs to the mixture and thoroughly combine; scrape down bowl.
Add the vanilla and lemon zest.
Pour mixture into a spring form pan and bake at 350 degrees for approximately 45 minutes to 1 hour, until it is slightly jiggly in the center.
Let cake cool completely at room temperature before removing side of pan. Refrigerate before serving.
